TUNA, SPRING ONION, CUCUMBER & AVOCADO LETTUCE BOATS

An easy, delicious and perfectly balanced lunch that takes 5 minutes or less to make!

INGREDIENTS:


  • One tin of (sustainably sourced) tuna in spring water (drained)
  • One spring onion (finally chopped)
  • 1/4 cucumber (diced)
  • 1/2 small avocado
  • 5-6 cherry tomatoes (sliced)
  • 3 leaves of Cos or Romaine lettuce
  • Chilli flakes
  • Tabasco


  • FOR THE DRESSING:
  • 1Tbsp Olive Oil
  • 1 Tbsp Apple Cider Vinegar


METHOD:

  • Mix the tuna, spring onion, cucumber, Tabasco and chilli flakes together with a drizzle of olive oil
  • Place 3 leaves of lettuce on plate
  • Spoon the Tuna Mix on top of the lettuce
  • Sprinkle the avocado and sliced tomatoes over the top
  • Whisk the olive oil and apple cider vinegar together and drizzle over the top

Cucumber contains silica which is important for hair growth.  The healthy fats in the olive oil and avocado are perfect for helping form healthy cell membranes of all of your cells, including your skin cells!  The lettuce, tomatoes and cucumber have a high water content which helps to hydrate your skin for that healthy glow.  Our bodies absorb water better from food sources than from drinking water (as outlined in the book, The Water Secret by Dr Howard Murad.
